Hey everyone! I am so excited to share with you my version of the famous No-Bake Energy Bite snack!
I LOVE eating at Freshii, and if you’ve been there before you can understand why. It is the perfect place to get a healthy meal that will also fill you up cause let me tell you, that is not easy to find. Alongside my usual Oaxaca rice bowl I order their energy bites which I find myself craving more than a normal amount. I wondered if I could find a recipe for them online and much to my surprise there are a ton of similar recipes as well as peoples different take on them swimming all over the internet.
I found a few that are very similar to the energy bites at Freshii but decided I would use my favourite ingredients from that and add my own touch! So here is MY version of the NO-BAKE Energy Bites!
If anyone knows me I am a full time dance instructor for kids and I teach 5-6 times a week! Now this being said, some nights I teach back to back classes from 4:00am-9:00pm which as you can imagine makes it hard to have a regular dinner and eat at a regular time. I usually make my dinner during the day and bring it with me at night, sneaking it in when I can (normally cold by then) but I try and make it work! The reason I loved these No-Bake energy bites is because 1. They take almost no time to make (and No-bake? talk about music to my ears) and 2. they are a quick and easy snack for people on the go, or with crazy schedules, like me!
Another awesome thing about these bites is you can also make them PEANUT FREE! Which is so important for me seeing as I work with children, and peanut allergies are common in my studio. The recipe below does have peanut butter in it, but I have also mentioned an alternative so that you can enjoy these bites in a peanut-free environment too! Just label them in the fridge and grab and go as you need!
- Peanut Butter (Almond butter or Sunbutter) * I actually have a student allergic to Almonds too, so Sunbutter is a great option!
- Organic Oats
- Dark Chocolate Chips
- Unsweetened Coconut Flakes (Shredded)
- Hemp Hearts
- Vanilla Extract
- Dark Chocolate Covered Quinoa
I’m going to be completely honest with you. As you can tell, there are no measurements with my ingredients. Normally I follow a recipe when I make things, but in this case I didn’t! I think my Italian ways are coming out, and I just sort of went with it!
I put all my ingredients in small bowls as you can see above, then I put all my dry ingredients in a bigger bowl and followed with the peanut butter, vanilla extract and honey. The honey was to add sweetness but you can also use agave as well if you’d like.
From there I mixed everything together with a spoon (for about 2 minutes) before giving up and using my hands. It was easier to really see how well everything was mixing and if I needed to add more of anything to the mixture.
When I was satisfied with the taste, I put plastic wrap on the bowl and put it into the freezer for about 15 minutes. A perfect time to clean up the mess you have been making this whole time. This allows the mixture to be less sticky and easier to roll up into shape!
After the kitchen was spotless I took the mixture out of the freezer and used a small ice cream scooper to shape and roll up the mixture into a ball shape! I want to say my mixture made around 20 balls! This will vary depending on how much of the ingredients you’ve used. I put them into a glass container, labelled them PEANUT and put them in the fridge right beside my other container labelled SUNBUTTER for those studio days.
IT REALLY IS THAT EASY!
